Last Wednesday while Nixie was at forest school me and Forrest went to our little special spot along the seawall and I couldn't help but notice Primroses everywhere! They are such happy little flowers, I can't help but smile whenever I see them. We foraged some on our little walk back home and we are lucky to have a lot growing in our garden too so we picked a lot from there as well. I didn't want to make crystallized flowers again, I really wanted to try something new so while Forrest had a nap I managed to make a friend a birthday cake along with some Primrose Jam! 

It was completely a last minute idea and I wanted to see if it would work, I didn't have very many Primroses so I made a small batch and surprisingly I had all the ingredients that I wanted at home and it turns out that I absolutely love Primrose Jam, I call it my rustic primrose jam because as you can see from the photo it might not be the prettiest looking thing but it is so tasty! I'm not an expert at jam making but had some packets of pectin and just kind of guessed how much to put in, I could have probably put more in to make it a bit thicker but I actually love the consistency of it. It goes perfectly on buttered toast!

Ingredients:

  • Half a litre of Primroses
  • 1 cup water
  • 1 cup sugar
  • half a packet of pectin (or more depending on your desired thickness)
  • 2 small apples, cut into small pieces
  • juice of 1 lemon

Directions

1. I washed the Primroses and let them dry then put them into a pan and just added all the ingredients together. I wasn't thinking clearly though and added the pectin in as well which I shouldn't have done. I should have cooked everything else and let it come to a boil before adding the pectin in slowly and whisking constantly to make sure there are no clumps but if you're like me and forget it'll still work! You just need to get whisk like a crazy person to get rid of any clumps.

2. Bring to a boil and allow the sugar to dissolve and continue to whisk until it begins to thicken. About 20-30 Min. Then pour into jars!
