Vegan Cupcakes with Lilac Frosting
Lilac trees are one of my absolute favourites, the smell takes me back to my childhood in Sweden, I remember seeing them in bloom everywhere and I remember always finding some to bring home to put into a vase so I couldn't be more pleased to have some growing right next to us. After we picked some we set about the task of separating the little flowers from the green stems. Then we used a recipe by Foraged By Fern (go check her out, the stuff she makes is so pretty!)
Lilac Frosting
1 cup lilac petals
1 cup water
a few blueberries (for a deeper colour)
Boil until bright purple. Then strain and mix the flower water with icing sugar until desired thickness.
and for our cupcakes I used a recipe by Loving it Vegan.
Vegan Vanilla Cupcakes:
- 1 and 3/4 cups (220g) All-Purpose Flour
- 1 cup (200g) White Granulated Sugar
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup (240ml) Soy Milk (or other non-dairy milk)
- 1/3 cup (80ml) Canola Oil*
- 2 tsp Vanilla Extract
- 1 Tbsp White Vinegar
Instructions
- Preheat the oven to 180°C and line a cupcake tray with 12 cupcake liners.
- In a bowl, mix the flour, sugar, baking soda and salt.
- Add the soy milk, vanilla extract, oil and white vinegar. Mix.
- Pour into your cupcake liners
- Place into the oven and bake for 20-25 minutes. Check the cupcakes at 20 minutes and if a toothpick inserted into the center doesn’t come out clean, then put them back in for a further 5 minutes.
