Three Of My Favourite Clover Recipes
There's nothing I love more than finding something amazing to forage on our adventures and then being able to come home and make something with our incredibly fresh ingredients. I love making sweet treats with clover flowers and in this post I'll share three of my favourite recipes: Red Clover Lemonade, White Clover & Strawberry Cookies & Red Clover Jam.
Red Clover Lemonade
This was so delicious, I barely had a chance to have any as Nixie loved it so much and just chugged it down!
What You'll Need:
- 3 cups Red Clover Blossom
- 4 cups water
- 1 cup lemon juice
- 1 cup sugar or 6-8 tbsp agave
How To Do It:
1. Add the blossoms and water to a pan and bring to a boil. Then Simmer for 10 min.
2. Add lemon and sugar. Simmer for another 5 minutes.
3. Then let cool
4. Strain and keep in the fridge
White Clover & Strawberry Cookies
What You'll Need:
- 1 cup stork
- 3/4 cup brown sugar
- 1/2 cup apple sauce
- 2 TBSP soya milk
- 3 cups flour
- 1 teaspoon baking soda
- 1/2 cup fresh white clover chopped up
- 1 cup strawberries diced
How To Do It:
1.Preheat oven to 180c
2. Cream together butter and brown sugar then add apple sauce then the milk. Mix.
3. Then add the flour and baking soda. Mix.
4. Then add the clover and strawberries.
5. Make the dough into small balls and place on parchment paper lined baking tray then pop into the oven for about 13/15 minutes until golden.
Red Clover Jam
What You'll Need:
- 2 cups packed clover blossom (no stems of leaves)
- 2.5 cups boiling water
- 1/4 cup lemon juice
- 4 cups sugar
- One packet of pectin
How To Do It:
1. Infuse the blossoms in the boiling water overnight. Then strain.
2. add the flower infusion, lemon, sugar and pectin to a pot and boil for about 20 min. You can do the freezer test to see if it's the right consistency if not boil for longer.
3. Put into a jar
