Elderflower Cordial
We finished making our elderflower cordial/syrup today. To be honest I wasn't really that fussed about finding elderflower this year as we made cordial last year and the cordial we made I didn't really like and normally I love all things elderflower but I decided to try again this year and this time it turned out so delicious! Now I'm hoping to be able to forage enough for some more before their season ends!



Elderflower Cordial

What You'll Need:
- 650g sugar
- 430ml water
- 23g citric acid
- About 15 flower heads
- 1 lemon
How To Do It:
1. Prepare your Elderflower by letting it sit on some paper towel for a few hours to get as many bugs off as possible. Then remove as much as you can of the green stems.
2. Combine sugar, water, citric acid into a pan over medium heat until sugar dissolves. Remove from heat.
3. Once at room temperature pour into a jug and add your elderflower and lemon.
4. Let seep for 48 hours then strain and enjoy!
